Ingredients

QUESADILLAS
 1 Box VG Gourmet Buffalo Bites
 4 Quesadilla wraps
 12 Slices Vegan Cheese of your choice
 0.50 cup Spinach
EASY HOME MADE RANCH DIP
 4 tbsp Vegan Mayo
 1 tsp Fresh dill
 1 Clove fresh garlic, minced
 1 tsp Fresh parsley
 1 tsp Lemon juice
 Pinch salt and pepper, to taste

Preparation

Cook the Buffalo bites according to the instructions on the back of the box.

Place the cheese slices and shreds on the tortilla, top one half with the spinach and buffalo bites.

Fold the quesadilla in half and place in a panini grill for 3-4 minutes, or in a pan for 2-3 minutes per side (with a bit of oil) until browned.

Meanwhile make the Ranch dip: chop garlic, dill and parsley and mix into a bowl with vegan mayo, lemon juice and some onion powder. Salt and pepper to taste.
