 1 Package VG Gourmet Quinoa & Chickpea burgers
 8 Slices of bread (the softer, the better!)
 ¼ cup Baby spinach
 ½ cup Shredded carrots
 3 tbsp Vegan mayo
 Parsley for garnish

Preparation

Cook VG Gourmet Chickpea & Quinoa Burger as directed on the box.

Lightly toast your bread if preferred.

Spread a layer of vegan mayo on each piece of bread. Top with the burger, shredded carrots and spinach. Close and cut into quarters to serve as an appetizer, or keep it whole for a hearty lunch.
