Sweet Potato Taco Pie

This is such a fun dinner for Taco Tuesday or any day of the week! The contents of the bag of VG Gourmet Taco & Chili Crumble is already fully seasoned, so you don’t need to add any seasoning at all! Now that’s easy!


  • 1 x Package VG Gourmet Taco & Chili Crumble™
  • 1 x Sweet Potato, diced
  • 1 x Can Diced Tomatoes
  • 2 x Avocados, sliced thinly
  • 4 x Medium Tortillas (Corn or Flour)


  1. Preheat oven to 425 F.
  2. Defrost package of VG Gourmet Taco & Chili Crumble™ as directed.
  3. On a baking sheet lined with parchment paper, empty contents of your bag of VG Taco & Chili Crumble. Add the diced sweet potato and contents of the can of diced tomatoes. Toss everything well to combine.
  4. Bake in a preheated oven at 425 F for 30-40 minutes, until sweet potato pieces are soft.
  5. To assemble: On the bottom of a springfoam cake pan, place a scoop of the taco & sweet potato mixture, top with a tortilla, add another scoop of the cooked taco mixture, top with some avocado slices, then another tortilla, more taco mix, avocado etc… until you have used up all your tortillas and taco mix!
  6. Bake at 375 F for 10 minutes. Slice to serve!
