MEXICAN 3-BEAN BURGER WITH TACO TOPPINGS

with homemade mango corn salsa and guacamole

Ingredients

TOPPINGS
 1 Burger bun
 1 VG Gourmet Mexican 3-Bean Burger
 1 Cabbage leaf, sliced thinly
 1 Serving guacamole
 sliced (optional)
MANGO CORN SALSA
 ½ tsp Sea salt
 ½ tsp Garlic powder
 ½ tsp Cumin
 ½ Lime (juiced)
 ½ cup Red onion
 1 cup Corn (fresh or frozen)
 1 Mango, cored and cubed (small)
 1 cup Grape tomatoes, chopped
 2 tbsp Cilantro (optional)
LIME GUACAMOLE (yields 4-6 burgers)
 2 Avocados
 ½ Lime, juiced
 ½ tsp Sea salt
 ½ tbsp Garlic powder

Preparation

*Based on 4-6 burgers
Place 2 avocados in a bowl, 1/2 juice of a lime, 1/2 tsp sea salt, 1/2 tbsp garlic powder
and mix until fully combined set aside. (Save an avocado pit and place any leftovers in a
sealed container with the pit for up to 2 days.)

MANGO CORN SALSA

Cook your corn, drain and add the 1 cup of cooked corn into a medium sized bowl.
Then place the prepped and chopped ingredients into the bowl (red onion, mango,
tomatoes, optional: cilantro), add in the spices, lime juice and mix until everything is fully
combined. Store any extra salsa in a sealed glass container for up to 1 week.

Once the guacamole and the salsa have been made, follow the instructions for cooking
the VG Gourmet 3 Bean Mexican Burgers. While the burgers cook, prep any other
toppings. Once the burgers are ready, top and dress your burger, enjoy!
