Cook the barley in water with a pinch of salt
While the barley is cooking, peel and chop the vegetables
Combine the carrots, turnips and sweet potato. Add 2 tsp olive oil along with the cumin, garlic powder, salt and pepper
Combine the onions and bell peppers with 1 tbsp olive oil, salt and pepper
Roast at 375F for 40 mins or until soft and nicely coloured
Ten minutes before the vegetables are done cooking, add our Lentil & Walnut burger patties into the oven
Mix the dressing using the ingredients listed above
Mix the soaked raisins in the carrot-parsnip-sweet potato mixture
Serve warm with a side of arugula. Top with the chopped roasted almonds and enjoy!
