Ingredients

For the bowl:
 2 cups cooked brown rice
 2 tbsp avocado oil
 1 box VG Gourmet Lentil & Walnut burger
 2 cups kale
 23 cups oyster mushrooms
 1 cup watercress (or mache)
 2 stalks green onions, chopped
 fresh herbs, micro greens & edible flowers for garnish (optional)
Peanut sauce:
  cup smooth peanut butter
 ½ cup water
 2 tbsp maple syrup or agave
 23 tbsp tamari
 1 tbsp rice vinegar
 ¼ piece of fresh ginger, minced
 23 small cloves garlic, minced
 1 tbsp fresh lime juice
 ¼ tsp chili powder (optional)

Preparation

Cook the brown rice according to the manufacturer’s instructions

In a medium skillet, heat 1 tbsp of the avocado oil over medium heat

Cook the patties for about 4-5 minutes on each side, or until golden brown. Cut into quarters

Heat the remaining oil and cook the oyster mushrooms until they soften and turn golden brown

For the peanut sauce:

Combine all ingredients in a high speed blender and process until smooth

Place everything in a bowl and pour the peanut sauce over the patties
